Grilling on the La Hacienda Clay Pizza Chimenea with Cambridge Hotlogs

As the name suggests, the Clay Pizza Chimenea is great for cooking 9″ pizzas when fired up with Cambridge Hotlogs. Because our Cambridge Hotlogs are denser and drier than firewood, they light easily and get the Clay Pizza Chimenea up to temperature in no time at all without producing masses of smoke.

But what about using the Clay Pizza Chimenea as a grill fired with Cambridge Hotlogs? We thought we’d put this to the test for a weekend family lunch.

We searched for a recipe that calls for rapid high temperature grilling of meat with our Cambridge Hotlogs, and found the perfect candidate in The Ginger Pig Meat Book

The recipe we chose was Oriental Pan Fried Goose Skirt with Crunchy Salad.  Goose Skirt (also called Onglet) is a very textured beef cut known for its flavour from the fore end flank that either needs to be marinated and flash cooked, or long slow cooking in a casserole.  This recipe uses a marinade of Ginger, Garlic, Chilli, Soy Sauce and Black Pepper to help ensure the meat stays tender when flash cooked

Setting the La Hacienda Clay Pizza Chimnea up as a grill couldn’t be simpler.   Just take the top half off and remove the pizza stone before firing it up with Cambridge Hotlogs

We wanted the Goose Skirt to be rare / medium rare, as it had been marinating for two days, so gave it about 3 minutes on each side

Once each piece of Goose Skirt had been grilled over the Cambridge Hotlogs it was left to rest for 10 minutes.  Resting the meat after cooking lets the muscle relax, ensuring the meat is served as tender as possible. When rested, the grilled Goose Skirt was carved into tasty ribbons with a good texture and served on the Crunchy Salad

Success! The Goose Skirt was perfectly cooked, even portions that were medium rare were very tender and not at all chewy. The Ginger Pig Oriental Pan Fried Goose Skirt with Crunchy Salad was served with a fresh Yotam Ottolenghi Cauliflower ‘Tabbouleh’ topped with sliced radishes (we couldn’t find any pomegranates)

This inexpensive but fabulous family lunch was enjoyed by everyone, all brought together by grilling the marinated Goose Skirt at a consistently high temperature on the La Hacienda Clay Pizza Chimenea with our Cambridge Hotlogs.  All ingredients were bought from local farm shops (Arrington Nursery & Farm Shop) butcher (Knibbs at Manor Farm, Bourn) Chinese and Oriental food specialists (Cho Mee on Mill Road) and of course the Cambridge Organic Food Company (COFCO).  Anything else we got from the Co-op, including this lovely Argentinian Malbec…
